Some of my favorite things about summer time gardens are fresh home grown tomatoes. There’s nothing like that taste. It’s fresh and sweet and just plain delicious.
Since the flavor of the tomato itself is wonderful, I don’t like to cover them up with a lot of spices or cook them. Rather, I prefer them in a fresh tomato salad, mixed with fresh basil from my garden and some feta — just sprinkled with a bit of balsamic vinegar.
Fresh Tomato Salad with Basil and Feta
One of my favorite easy tomato recipes is simple tomato salad. Here’s how it goes
- 4 tomatoes, sliced or chopped, or a handful of cherry tomatoes cut in half
- 1/3 to 1/2 block of 8 oz. feta cheese, sliced or chopped (to taste)
- 3-4 fresh leaves of basil, torn up into small pieces
- red wine vinegar or balsamic vinegar (just a sprinkle or to taste)
- salt and pepper to taste
It’s very simple. Put the sliced tomatoes, into a bowl, sprinkle the red wine or balsamic vinegar over it (not very much at all – go very light). Sprinkle some salt and pepper on top of the tomatoes. Add the feta and basil. Let it sit for 2-3 minutes before enjoying.
You can personalize this depending on what’s in your garden or cupboards. Sliced onions, olives, and sliced cucumber all make great additions to this salad.
